(we've all been there!).
This veggie-packed breakfast casserole is my go-to for a healthy and
delicious start to the day. It's so good, you'll want to
"avo-control" yourself! 😉
Ingredients:
- 1 tablespoon
olive oil
- 1 onion,
chopped
- 2 cloves
garlic, minced
- 1 red bell
pepper, chopped
- 1 green bell
pepper, chopped
- 1 (10 ounces)
package of frozen chopped spinach, thawed and squeezed dry
- 1 (14.5
ounces) can of diced tomatoes, undrained
- 8 eggs
- 1/2 cup milk
- 1/2 cup
shredded cheddar cheese
- 1/4 cup
grated Parmesan cheese
- Salt and
pepper to taste
Instructions:
1. Preheat & Prep: Preheat
your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

2. Sauté the Veggies: Heat
olive oil in a large skillet over medium heat. Add onion and garlic and cook
until softened about 5 minutes. Add bell peppers and cook until tender-crisp,
about 5 minutes more.
3. Spinach Power: Stir
in spinach and tomatoes. Cook until heated through. Spinach is like the
superhero of leafy greens, packed with vitamins and antioxidants. Eat your
greens, girl! 💪
4. Egg-cellent Mixture: In
a large bowl, whisk together eggs and milk. Stir in cheddar cheese, Parmesan
cheese, salt, and pepper.
5. Combine & Conquer: Pour
the egg mixture over the vegetables in the skillet. Stir to combine.
6. Bake to Perfection: Pour
the mixture into the prepared baking dish. Bake in preheated oven for 20-25
minutes, or until set.
7. Serve & Savor: Let
the casserole cool for a few minutes before serving. Enjoy! This casserole
is also perfect for meal prepping. Just cut it into individual portions
and store it in the fridge for a grab-and-go breakfast all week long.
