Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (10 ounces) package of frozen chopped spinach, thawed and squeezed dry
  • 1 (14.5 ounces) can of  diced tomatoes, undrained
  • 8 eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions:

1. Preheat & Prep: Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish. This is the perfect time to blast your favourite playlist and get in the zone! 🎶

2. Sauté the Veggies: Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened about 5 minutes. Add bell peppers and cook until tender-crisp, about 5 minutes more.

3. Spinach Power: Stir in spinach and tomatoes. Cook until heated through. Spinach is like the superhero of leafy greens, packed with vitamins and antioxidants. Eat your greens, girl! 💪

7. Serve & Savor: Let the casserole cool for a few minutes before serving. Enjoy! This casserole is also perfect for meal prepping. Just cut it into individual portions and store it in the fridge for a grab-and-go breakfast all week long.
